Savoury Chocolate Sausagemeat

This recipe can be used to stuff your turkey, to fill sausage rolls, or simply pressed into burger shapes and pan fried.

You will need:

250g  Sausagemeat (for vegetarian substitution see below)

20g   fresh white bread

Half a small onion

15g  98-100% cocoa chocolate (available from the shop, or you can use a sweeter dark chocolate eg 70% if you prefer)

Half a teaspoon of grated nutmeg

A sprig of Sage

40g dried apricots

Place all the ingredients in a food processor and process briefly.  The sausagemeat is then ready for use in your recipe.

Alternatively, grate the bread, finely chop the onion and sage, and roughly chop the apricots. Grate the chocolate finely.  Place all the ingredients in a bowl and mix well. 

You may wish to add a little black pepper to the mixture; it is not usually necessary to add salt as there is usually plenty in the sausagemeat.  If you want to shape the sausagemeat, a little flour on the worksurface and your hands will stop it sticking.

Vegetarian Version

Follow the recipe above, but instead of sausagemeat, substitute 250g of a mixture of cooked kidney beans or cooked chick peas, chopped mushrooms and chopped nuts, season to taste and then add enough of an egg to hold the stuffing together.  You could also add a few cranberries or prunes as well.  The exact mixture does not matter greatly so have fun experimenting!
